Its a bug of miui build. So it won't be fixed until official beta fixed it (according to moderators). Try disabling full screen guesture. Basically the problem is with swipe up guesture. Swiping up to go to home or swipe up and hold for opening recent activates this bug. So try using other ways to make youtube to go in background.

Some methods I use:
*Use holding the left to mid or right to mid guesture to switch with previous app.
*Open other options while in the app you want to use in PIP. For example click phone settings icon from notification bar, hold wifi, Bluetooth etc to get to their settings page to make the app go to PIP mode correctly.

After you successfully go to PIP mode this way you can use everything like normal and use swipe up to goto home screen or cancel any unnecessary page you oppened.

Or you could just disable the full screen guesture and use the old styled navigation buttons instead.
