[Poco F2 PRO] twrp "failed to mount '/system_root' (no such file or directory)"

Hello,
I am currently using Global Stable on my Poco F2 PRO, but I've been reading about the Xiaomi.eu ROM and I want to try it.
I have never done this before so I followed this guide, which led me to unlocking the bootloader, and then installing installing TWRP + Magisk.
I was able to easily unlock the bootloader, and to install TWRP + Magisk. But then, I tried to install The latest Stable ROM and I got the following error on TWRP:

What am I doing wrong? How can I fix this?

I pressed "Reboot to System" by accident and it was working, so I guess this is a misleading bug...

This happens to me when I try to update to xiaomi.eu 12.5.3, try flashing 12.5.2. The /system_root mount fail I think is normal.
