in my firm i have to get phone MI 11i 8/256 5G, somewhere is called Xiaomi Mi 11X Pro or Xiaomi Redmi K40 Pro+

Mi 11i = haydn (codename/boardname of the device)

There is one TWRP but it's not stable enough to install Xiaomi.eu ROMs.

Hi! I have this same phone, but the guide says that you need to update to the latest *chinese* version first, but my phone has global by default. Can I update directly to the EU version or do I need to download the chinese rom somewhere else and install the chinese rom first?

Update the ROM you have on your phone. (Global)

The manual is written for Redmi K40 Pro, therefore it is written there to update the Chinese ROM.
