Just got a 14 ultra

2 days ago bought a 14 ultra. Had an iphone 15 pro but wanted the best in photography. Think I have an EU version as today got updated to the 1.0.9.0. Read though that the EU version is limited compared to the china one. If I go for unlocking bootloader and load a rom from here what do I gain...
